Homemade Garlic Naan Bread

Naan bread need not be made with tandoori oven always. I made this naan bread using a normal pan/tawa with few simple ingredients.

Preparation time :10 mins
Cooking time: 2 mins for each bread  
Serves - 4
Number of breads : Makes 8 to 9 approximately

Ingredients:
Egg - 1
Milk - 1 pint
Plain Flour - 4 cups
Garlic - 1 bulb
salt - 1/2 tsp
Oil - 1/2 cup


Pre-Requisites:
Peel the skin of the garlic and grate using a cheese grater.

Dough Preparation:
Break the egg and mix  it well with the milk. Add the salt with the flour so that it is mixed evenly.Knead the dough by adding little by little of the milk and egg mix with the plain flour until it becomes soft. If it is sticky add a bit more of the flour and continue kneading until it becomes soft.

 Divide the dough into several portions by making small balls using the palm .
Rolling the Dough:
Step1:
Do a bit of dusting and roll it using a rolling pin until all the corners are evenly flattened. If any edge gets sticky while rolling repeat the dusting process .


Step 2 :
Pull the edges of the rolled dough and make a small well. Add a teaspoon of grated garlic and roll it to a ball again


Step :3
Repeat step:1 by rolling the dough again to make the naan ready to cook.

Cooking Method:
  Heat a flat-bottomed pan for 2 minutes. Transfer the rolled dough into the pan. Add 1/2 a tsp of oil. Cook on one side   for a minute on a medium flame , turn it over and repeat the process by cooking on the other side of the Naan.

Naan bread is ready to serve. Serve it with any curry/gravy of your choice. I served it with Jalfrezi.

Semia(Vermicilli) Upma

If i get bored to cook i choose to make semia upma. It can be made in minutes and tastes great. Curry leaves brings in nice aroma to this dish but i've made it without using these as it was out of stock.



Ingredients:

1/2 Red Onion Chopped
1/2 a tomato chopped
1 Dried red chilli
2 garlic cloves  chopped
Turmeric powder - 1/4 spoon(optional)
Vermicilli - 1 cup
curry leaves - 1 strand (optional)
Mustard seeds - 1 tsp
Oil - 1/2 tbsp
Salt - 1/2 tsp





Pre-requisite:

   Dry roast the vermicilli for 3 mins in medium flame

Cooking method:

     Do the seasoning by adding mustard seeds and red chilli with hot oil . Fry the  onion and garlic until golden brown , now add chopped  tomato  and fry for a minute. In the ratio of 1:2 add water and boil until bubbles starts popping. At this moment add the rest of the ingredients and stir until the vermicilli is cooked thoroughly.

Ragi Roti with Cabbage Chutney





Ragi Roti is a very healthy food. In India ragi is traditionally the first weaning food for babies.
Three simple steps is all you need for making this roti
Step 1:
     Chop 1/2 a cup of red onions and 2 strands of curry leaves
Step 2:
     Use 2 cups of Ragi flour and mix it  using hand with  chopped onions, curry leaves and add 1/2 tsp of salt
Step 3:
    Pat the ragi mix by using the finger in a flat pan and add little oil around the roti  and u r ready to go.......

Paniyaram

I made this paniyaram  using the the regular Idli/Dosa batter by  adding sauted finely chopped red onions with seasoning.
All you need is the paniyaram maker to get the shap.

Beetroot Pizza




Ingredients:
Grated and cooked Beetroot - 1 cup
Mature Cheddar Cheese -50 gms
Ready made Pizza Base - 1
Tomato Ketchup - 1 tbsp

Cooking Method:

Spread tomato ketchup on the pizza base, top it up with cooked beetroot and finally grate the cheese with a cheese grater. Bake it for 10-15 mins and a nutritious pizza is ready to eat.

Parrupu Adai




Paruppu Adai is a nurtition packed  South indian food. Soak toor dhal and rice in 1:2 ratio and grind it by adding garlic cloves and dried red chillies using a wet grinder.




 Add chopped coriander, curry leaves and red onions , salt and mix the batter thoroughly.
 Make the adai just like making dosa.

Pink Salmon with mashed potatoes

A simple and healthy breakfast on the go............

Ingredients:
Pink Salmon - 1 fillet
Mashed Potatoes - 1 cup
Tomato Ketchup - 2 tbsps
Cucumber Slices - 4
Bread - 1
Salt - 1/2 tsp


Cooking Method:
Steam Salmon fillet , split it into small chunks with fork and mix thoroughly with mashed potatoes and salt. Cut the bread loaf horizontally and stuff the mix. Top it up with ketchup and decorate with cucumber slices.

Spring Onion Parata


Spring Onion Parata is a very healthy food packed with nutritional value.I used spring onions from my garden and my kitchen was filled with spring onion aroma for the whole day.


Ingredients:
Spring onions(finely chopped) - 1 cup

Wheat flour - 2 cups

Gram flour - 1/2 cup

Cummin seeds - 1/2 tsp

Chilli powder - 1 tsp

Turmeric powder - 1/2 tsp
Lukewarm water - 1 cup

Salt - 1/2 tsp

Dough Preparation :

Mix all the ingredients listed above and knead the dough well

Parata Preparation :
Roll the dough into small lemon sized balls and make the flat bread using a rolling pin.

Chicken Sandwich




Ingredients:
Wholemeal bread with oats - 1 loaf
Onion(chopped) - 1 cup
Iceberg lettuce - 1
Chicken breast fillets - 3
Ginger & Garlic paste - 1 tsp
Garam masala powder - 1 tsp
Chilli powder - 1 tsp
Oil - 2 tsps
turmeric powder - 1/2 tsp
Gravy preparation:
Heat a frying pan with 2 tsps of oil and all all the ingredients above except lettuce and cook for 20 mins by adding water.
Sandwich Preparation:
Take 2 slices of bread, add some gravy on one slice, top it up with a lettuce and cover it up with the other slice of bread.

Kerala Parota


Kerala parota is a flat bread made with eggs and plain flour. Though it doesn't carry much of nutritional value i try to compensate with mixed veg spicy kurma to compensate it.

Ingredients :

Plain flour - 2 cups
Free range eggs - 2 medium
salt - 1 tsp
Sunflower Oil - 1 tbsp

Dough preparation :

Mix all the ingredients and knead it for 10 mins continuously to make it soft.

Parota preparation:

Roll the dough into small balls , apply oil on top of it and keep it aside. Now twist the dough balls
and into a spiral shape . Again roll it back into its original shape. Repeat the process thrice. Now roll the dough with the rolling pin and bake it.
