Cod Fish Fritters

Cod Fish Fritters can be enjoyed as a snack or a starter in a full meal.




Ingredients:
  Skinless boneless Cod Fish - 500 gms or Cod fillets - 5
  Ginger garlic paste - 1 spoon
  Semolina - 2 tsps
  Red chilli powder - 1 tsp
  Turmeric - 1/2 tsp(optional)
  onions chopped - 1/2 cup
  Salt - 1 tsp
  oil - 100 ml








Cooking Method:
      Wash the fish thoroughly and checkcarefully  for any bones  .Cut the cod fillets into small pieces and
 blend coarsely without adding water. Mix all the ingredients using fingers and make small patties.Heat 100 ml of oil in a pan and deep fry the them to make cod fish fritters.

Semia(Vermicilli) Upma

If i get bored to cook i choose to make semia upma. It can be made in minutes and tastes great. Curry leaves brings in nice aroma to this dish but i've made it without using these as it was out of stock.



Ingredients:

1/2 Red Onion Chopped
1/2 a tomato chopped
1 Dried red chilli
2 garlic cloves  chopped
Turmeric powder - 1/4 spoon(optional)
Vermicilli - 1 cup
curry leaves - 1 strand (optional)
Mustard seeds - 1 tsp
Oil - 1/2 tbsp
Salt - 1/2 tsp





Pre-requisite:

   Dry roast the vermicilli for 3 mins in medium flame

Cooking method:

     Do the seasoning by adding mustard seeds and red chilli with hot oil . Fry the  onion and garlic until golden brown , now add chopped  tomato  and fry for a minute. In the ratio of 1:2 add water and boil until bubbles starts popping. At this moment add the rest of the ingredients and stir until the vermicilli is cooked thoroughly.

Blueberry Banana Smoothie(Dairy Free)

Blueberry is full of antioxidants and should be consumed atleast once in a week.Usually it's made using yogurt but i wanted to make it with the whole goodness of the fruit.






Ingredients:
Banana Medium Sized - 1
Blueberry(fresh) - 100 gms
Ice Cubes - 4 or water - 1/4 cup
Sugar - 1/4 cup(optional)


Blend Blueberries and banana by adding ice cubes or water. Ice cubes or water is a must otherwise it will turn out to be in a jelly-like consistency .I made it sugar-free and dairy free but these can be added according to your preference.

Oatmeal Cranberry Snack bars

 Cranberry is a wonderfruit with many healing properties. We usually make cranberry sauce during festive season as fresh cranberries are available easily. Apart from that dried cranberries are available any time of the year and we should try to use it as a part of a healthy diet. Plenty of breakfast bars are available in shops instead it's very easy to make at home.




Ingredients:

Quick Cooking Rolled oats - 200 gms
Cane Sugar - 1 cup 
Whole milk - 1 cup
Dried Cranberries - 1 cup
Butter - 30 gms





 Pre-requisite:

   Coat a baking tray with butter. Mix all the ingredients and transfer it to the tray.

Baking method:

    Preheat the oven for  250 degrees. Bake the mixure for 20 minutes. Check the oat bars after 15 minutes of baking. If it starts to brown then stop baking. As i have added milk to the mixure it's going to be a bit softer. If it's baked for  longer than needed it will go brown very easily and you can't enjoy the taste of cranberries .This is a low-calorie healthy snack as i've reduced the amount of butter and added milk.

Potato Masal Kurma

Potato masal kurma is a blend of authentic spices and can be made very quickly without much effort



Ingredients:

Fresh Coconut - 1/2 or Dessicated coconut - 1/2 cup
Dried Red Chillies - 2
Fennel seeds -  1 tsp
Cinnamon stick - 1
Cloves - 3
Garlic chopped - 1 tsp
Chopped red onion - 1/2 cup
Chilli powder - 1 tsp
Dhaniya powder - 2 tsps
Turmeric powder - 1/2 tsp
Diced small cubes of potatoes - 1 cup
Oil - 2 tsps
salt - 1 tsp





Pre-requisite:

     Grind the fennel seeds and fresh coconut and make it into a smooth paste.
  

Cooking Method:

     Do the seasoning with cinnamon and cloves in 2 tsps of oil .Saute the chopped onion and garlic until it turns brown . Now add the rest of the ingredients , ground paste and 2 cups of water. Boil for 15 mins in a medium flame.

Balti Chicken Curry

Balti Chicken is widely available in England, i usually buy the Balti sauce from the shops. This is the first time i got this recipe from my friend. It came out very well. I used red chilli peppers but a combination of red, yellow and green chilli peppers are used for this recipe. I wanted to blog it before i forget.



Ingredients:
Red Chilli Pepper - 1
Sunflower oil - 1tbsp
Red onions - 2
Tomatoes - 2
Diced  chicken breast fillets - 400 gms
Ginger - 1inch piece
garlic - 1/2 bulb
Cummin seeds - 1 tsp
Cloves - 4
Cinnamon - 2  small pieces
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp
Salt - 2 tsps


Cooking Method:

    Dice the Red peppers, Red Onions, Tomatoes, Garlic and Ginger. Use 1/2 tbsp of oil and tawa roast the chopped ingredients for  5 minutes. Cool it down and grind it into a paste. In a thick bottomed pan heat the rest of the oil and do the seasoning with  Cinnamon , Cloves and commin seeds and add the ground paste into it. Add the remaining ingedients into the paste and cook until the chicken gets cooked.

Kathirikai(Aubergine) Podimas

 Aubergine/ Brinjal/Eggplant /Kathirikai however u call it , this vegetable is available all over the world .
One cannot get a bad outcome of any recipe tried with this as the vegetable itself is very tasty.



Ingredients:
 Long Purple Aubergine - 1 (If using a different variety choose as desired)
Garlic chopped - 1 tsp
Chopped Red onion - 1/4 cup
Urad dhal - 1 tsp
Dried Red chillies - 2
Coriander seeds - 2 tsps
oil - 1/2 tbsp
 Asafoetida - 1/4 tsp

Turmeric powder - 1/4 tsp
salt - 1 tsp



Pre-Requisite:

Dry roast the coriander seeds,urad dhal and red chilles and grind it to a powder



Cooking Method:

           Saute the onions and garlic in oil and fry the aubergine for a couple of mins. Cover with a lid and steam cook with sprinkling a little bit of water for abt 10 mins. Add the dry roasted powder and other ingredients and cook for another couple of mins.

Stuffed Gobi Parata

Stuffed gobi parata is a famous North Indian delicacy . Traditional method is time consuming but i found a short-cut to make the stuffing using microwave.
 Ingredients:

Very finely chopped red onions - 1/4 cup
Garam masala powder - 2 tsps
Very finely chopped green chillies - 1 tsp
Turmeric powder - 1/2 tsp
Cauliflower - 1 medium sized
Oil - 1 tsp
Salt - 1/2 tsp





Pre-Requisite:
Grate the cauliflower by holding the stem and make sure only the florets are grated.
Make the chappathi dough ready 


 Cooking Method:
Add 1 tsp of oil, the finely chopped chillies and onions in a microwavable bowl and heat it for a minute.stir the contents by using a spoon and heat if for another minute. Now add the rest of the ingredients and cook for exactly 7 mins . Make sure to stir the contents every minute so that the taste of masala is even. Do not add water as the stuffing has  to be cooked with the water produced in the Cauliflower. The stuffing is ready. cool it down for a couple of minutes.Add a spoon of stuffing with the chappathi dough and roll it using the rolling pin. If u r a weight watcher , this is a perfect recipe for u !

Ragi Roti with Cabbage Chutney





Ragi Roti is a very healthy food. In India ragi is traditionally the first weaning food for babies.
Three simple steps is all you need for making this roti
Step 1:
     Chop 1/2 a cup of red onions and 2 strands of curry leaves
Step 2:
     Use 2 cups of Ragi flour and mix it  using hand with  chopped onions, curry leaves and add 1/2 tsp of salt
Step 3:
    Pat the ragi mix by using the finger in a flat pan and add little oil around the roti  and u r ready to go.......
