Kosambari (With strawberry)

Kosambari is a mung bean salad made in karnataka. There are plenty of versions of kosambari . It's tradionally made with split yellow mung bean ,cucumber ,coriander, carrot ,chilli, lime juice and grated carrots. Retaining the main ingredient yellow split mung bean i  wanted to try out a different combination . With my strawberrymania at the moment i couldn't help but slice in some of these berries into kosambari. This is the first time ever i'm adding a fruit to kosambari and it tasted heavenly.

Main Ingredients:
Yellow Split Mung Bean - 1/2 cup
Fresh lime - 1/4
Baby Chantenay Carrot- 1
Manzanilla olives with lemon and coriander dressing - 1/4 cup
Salt - 1/4 tsp
Black pepper powder - 1/4 tsp
Strawberries - 4

Optional Ingredient :

Finely chopped red onions - 1 tsp

Pre-Requisites:
Soak the yellow split mung bean for half an hour in water

Servings:
Serves 2

Salad Preparation Method:
Peel the skin of carrot and grate it.Chop the strawberries and reserve one for decoration. Mix all the ingredients by sqeezing in a dash of Lime.


With legumes, fruit, veg , onion and olive going in , i couldn't ask for more for my one of 5-A-Day!

Strawberry Tangy Minty Punch

What do i do with my bowl of  strawberries today?



Pack some salad for my hubby's lunch box and then......do some strawberry icecream which i bookmarked. Why not surprise him by making an unusual combination for the salad. He loves the mango flavour. why not some mint ?
Seasonal fruit/veg tastes at its best. We strongly believe in growing organic food. We didn't use any pesticides to grow these berries and mint.Seasonal foods are super foods!

Ingredients:
Mango - 1
Strawberries - 1 punnet
Mint - few leaves



Pre-requisites:
1.Slice in the strawberries


2. Peel the skin of mangoes , remove the seed and dice into small cubes

3. Chop the mint leaves and reserve some for the decoration

Preparation Method:

Use  the sliced mangoes for making the pulp and reserve some chunks to add to the salad


Blend the mangoes into a pulp using the blender


Add the pulp to the sliced strawberries



Pop in the surprise flavour of chopped mint


Mix well by adding in the remaining mango slices



I just loved it. Especially , the minty flavour went on well with this combo. I made it sugar free as the fruits were sweet enough.

Green Peas and Sweetcorn salad


Salads are must for a healthy and balanced diet.


Ingredients:
Green Peas - 1cup
Sweetcorn - 1 cob
Red Onion(chopped) - 1/4 cup
Carrot (diced) - 1 cup
Olive oil - 1 tsp
Salt - 1/2 tsp

Salad Preparation:

Boil peas and corn. Saute the onion in oil and add the peas , corn and carrot. Add salt and stir for a minute.

Coleslaw Salad



Salads are supposed to be very good for health. Coleslaw salad is my all time favourite! This is my version of coleslaw which is very easy to prepare and tasty to eat.

Ingredients:

Carrot - 2 (medium) Cabbage - 200 gms

Red Onion - 1(small) Vinegar - 1 tsp(optional)

Mayonnaise - 4 tsp Lemon juice - 1tsp(optional)

Preparation:

Grate the carrots and cabbage .Finely chop the red onion.Whisk the other ingredients

and add the shredded vegetables to it.Mix it thouroughly. Refrigerate it for an hour.Done!

I made vinegar optional bcoz I don't prefer to add preservatives but it gives a little longer life for

the salad.

U can either snack on it or use it with other food !
