Cabbage Chutney

A friend of mine has made nice pakodas and served it with a very tasty chutney. Initially i thought that she  madecoconut chutney and asked the recipe as there was a slight difference in taste but to my surprise she said it's a cabbbage chutney. I couldn't wait to try out the chutney after reaching home to see if can make it to the same great taste.It came out really well and it got over even before i could take a picture of it.

Ingredients:
 
     Finely chopped Cabbage - 1/2 cup
     Cummin seeds - 1/4 tsp
     Coriander seeds(optional) - 1/4 tsp
     Urad dhal - 1/2 tsp
     Channa dhal - 1/2 tsp
     Garlic - 1 clove
     Gingelly Oil - 3 tsps
     Mustard seeds - 1/4 tsp
     Dried red chilli - 1
     curry leaves - 1 strand
     Asafoetida - 1 pinch
     Salt - 1/4 tsp

Cooking Method :

      In a non-stick pan add 2 tsps of gingelly oil and add Channa dhal , Urad dhal , garlic clove and roast until brown. Now add the red chili, oriander seeds and cummin seeds. Once the cummin seeds splutters add the chopped cabbage and fry it about 5 minuites. Once it cools down add salt and  grind it to bring to the chutney consistency. For the tadka heat 1 tsp of oil , add the mustard seeds and curry leaves and a pinch of asafoeida and serve with bhajjis, pakoras, chappathis, idli or dosa. Tastes great with rice too!!!!!!!

BBQ Chicken(Indian Style)

My hubby dear wanted BBQ chicken and i made a BBQ sauce in minutes by experimenting the ingredients of my preference but it has become a super-hit.

Sauce Ingredients:
Coriander (chopped) - 1  cup
Mint leaves(chopped) - 1/4 cup
Lime -1
Green chillies - 2
Garlic - 2 cloves
Ginger - 1 inch piece
Red Onion (copped) - 1/4 cup
Salt - 1/2 tsp


For the BBQ:
Red Pepper -1
Red Onions - 2
Diced Chicken breast fillet - 500 gms

Pre-requisites :
Dice the Red Pepper and onions in squares .
Method:
     Grind all the sauce ingredients by squeezing the lime juice without adding water and make it to a smooth paste. Marinate  the diced chicken breast fillet  for 2 hours. Arrange the peppers , red onions and marinated chicken on the BBQ skewers and cook on the BBQ grill until the chicken is soft.Mouth-watering BBQ chicken is ready!

Tawa Roasted Veggies


Tawa roasting the veggies has to be done with care as overcooking or undercooking the vegetables will spoil the taste. Choose vegetables of your choice and sprinkle it with a little bit of olive oil . Close the lid of the tawa and cook it in a slow flame. Do not add water as the vegetables will get cooked in the steam and water  produced  in the vegetables. Make sure not to burn the veggies and cook for 20-25 mins and u get a nutrition packed food. Good to have it for dinner preferably after a heavy lunch





To get that oven roasted look of tomato , Slice in the tomato(preferably a vine tomato) into half and cook for a minute by turning it upside down.
